Hawaiian Quesadillas

This is a great and easy recipe! Takes about 5 minutes to prepare and about 10 to cook! Super easy and delicious!

Hawaiian Quesadillas

Ingredients: (Enough for 3 full size quesadillas)

5 oz diced cooked ham (I was lazy and bought some already cut up!)
2 cups Mozzarella and Provolone Cheese Mix
1 green pepper, diced
8 oz can crushed pineapple, drained well
3 tsp mayo or miracle whip
Tortilla shells



Directions:

1. Spread each tortilla shell with 1/2 tsp of mayo.


2. Top tortilla with cheese, ham, peppers, and pineapple. 


3. Sprinkle a little more cheese and them top with other tortilla shell.  Repeat with 2 more quesadillas. 


4. Cook quesadillas on medium heat. Takes about 3-5 minutes on each side, until tortilla has browned. 


6. Enjoy! 



Few notes: 
* I made all 3 quesadillas before I went to work, all we had to do was cook them!
* Can top with salsa, guacamole, and/or sour cream!
*You could also dip it in marinara sauce just like hawaiian pizza!

Slow Cooker Turkey Sausage & Peppers

This is a great dish that only takes a few minutes to make! The original recipe called for regular italian sausage and regular white pasta but I used turkey sausage and wheat pasta to make it a little healthier!

Slow Cooker Turkey Sausage and Peppers 

Ingredients: 
20 oz turkey italian sausage (sweet or hot depending on what you like)
1 sweet onion, diced
3 large peppers (I used yellow, red, and orange because they come in a pack, you can use whatever kind you like!)
2 tsp minced garlic (about 4 cloves)
26 oz tomato sauce
1 package wheat rotini

Directions: 

1. Brown sausage links. You don't need to cook them the whole way because they will cook in the slow cooker.

2. Dice up onions, peppers, and garlic, while sausages are cooking. 




3. After sausage browns, cut into bite size pieces. 


4. Add ingredients to slow cooker and stir in tomato sauce. 



5. Cook on low for 7 hours. 


6.  Cook rotini as directed on package and serve sausage and peppers on top.

Slow Cooker Cheesy Chicken, Bacon, and Tots

It's been a while since I've posted! This is one of my favorite slow cooker recipes and it's super easy. Be warned, this is definitely not one of the healthiest meals I've posted but it's delicious!

Slow Cooker Cheesy Chicken, Bacon, and Tots

Ingredients:

1 (32 oz) package of frozen tater tots (I prefer onion flavored) 
1/2 package of cooked bacon, cut into small pieces
1 lb chicken breast, cut into bite size pieces
2 cups shredded cheddar cheese (I use Sargento Double Cheddar for extra flavor) 
3/4 cup milk
salt & pepper to taste

Directions:

1. Place slow cooker liner in (optional but awesome for clean up!) and spray with cooking spray.

2. Cook bacon (Buy it already cooked if you want things to be even easier!). I cooked mine in the Pampered Chef Small Ridged Baker (click here to buy!)and it's awesome because you can cook the bacon in the microwave and all of the grease drains to the bottom of the pan!


3. Pour a 1/3 of the tater tots into the bottom of the slow cooker. 


4.  Put 1/3 of the bacon and cheese on top of the tater tots. 



5. Place chicken pieces on top and season with salt and pepper. 

6. Put 1/3 of cheese and bacon on top of chicken. 



7. Place remaining tater tots on top and then finish with remaining bacon and cheese. 



8. Pour milk on top and cook on low for 6 hours. 



9. Enjoy! **And try not to eat the whole pan!** :)

Slow Cooker Apple Stuffed Honey Pork

Traditions have always said to start the new year off with Pork and Sauerkraut but, sauerkraut isn't my favorite thing so I decided to try something new! Here's a great recipe for us non-sauerkraut pork lovers!

Slow Cooker Apple Stuffed Honey Pork

Ingredients:
2.5-3 lb Pork Loin
3 Red Delicious Apples
Approx 4 Tbsp Honey
Approx 2 Tbsp Cinnamon

Directions:
1. Slice up the 3 apples and put 2 apples worth of slices on the bottom of the slow cooker. Top with half of the cinnamon.


2. Cut slices across the pork, about 1/2" apart. Squeeze honey into each cut and then stuff with one apple slice.  

3. Place pork in slow cooker. Spread remaining honey on top. Top with remainder of apple slices and cinnamon.


4. Cook on low for about 6 hours. Pork temperature needs to reach 145 degrees.

A few notes:
*Even with the cinnamon and honey, it wasn't too sweet, I was pleasantly surprised.
*This is a great paleo recipe (obviously minus to the rice side!)
*The apples are great to enjoy with dinner or you could blend them in a food processor to make a quick apple sauce!
